Hi! Hello! I wanted to wish a happy Fourth of July to those of you in the U.S. ahead of tomorrow. 😊 I hope you’re finding time to slow down this long weekend, whether that means gathering with loved ones, soaking in a quiet moment with yourself, or cooking something special.

This burger feels like a little celebration of the many flavors that I grew up eating and loving. From Japanese sweet potato fries to a Korean-inspired gochujang mayo to a vegan beef patty infused with sauces that nod to both Chinese and Vietnamese cooking. This is why I settled on ‘Asian-inspired’ when I was thinking of what to name this recipe. 😆

It’s plant-based, delicious, and something I like to make in the summertime. As a carb-heavy plate with about 20g of protein per serving, it’s a comforting meal that will keep you feeling satiated and content, which is exactly how I want to feel this weekend. Let’s dive in!


Protein breakdown (approximately 20g protein per serving):

  • 340g vegan ground beef = 60g protein

Tiff’s Tips

  • Which brand of vegan ground beef is good to use? We’re lucky to live in a time with so many plant-based ground beef options. I used Impossible for this recipe, but Beyond Meat also works great.

  • Where to buy pickled mustard greens? You can find them at most local Asian grocery stores. I got mine from Ten Ichi Mart, a Japanese mini mart. The brand I picked wasn’t overly salty, which I liked.

  • What about the vegan mayo? Any plain vegan mayo from your local market will do. I used NotMayo by NotCo, which is made with soybean oil and chickpea flour. Another great option is Follow Your Heart.

  • Pantry items: light soy sauce, sriracha, hoisin sauce, sesame oil, gochujang

  • Storing leftovers: Store the mustard greens, gochujang mayo, vegan beef patties, and Japanese sweet potatoes separately in the fridge for up to 3 days. Sugar-coated peanuts can be kept in an airtight container at room temperature for up to 1 week. Burger buns will last 3–5 days on the counter in their original packaging. Before serving, reheat the sweet potatoes in the air fryer for a few minutes and warm the beef patties in the microwave for about 1 minute.
